Chicken Adobo

  • 1kl Chicken (cut into serving sizes)
  • 1 bulb garlic (peeled, smashed)
  • 1 cup vinegar
  • 1 cup soy sauce
  • 2 large onions (sliced)
  • 1 tsp black peppercorns
  • 1 tsp black pepper (cracked)
  • 3 tbsp oyster sauce
  • ¼ cup sugar
  • 3 bay leaf (laurel)
  1. In a large bowl, mix together vinegar, soy sauce, oyster sauce and half of the garlic.
  2. Add in the chicken, stir until all chicken cuts are coated with the marinade. Cover and marinate for at least an hour.
  3. When ready, pour the chicken and the marinade in a pan, simmer for 20 minutes.
  4. Add in the onions, peppercorns, sugar and pepper. Simmer for another 30 minutes.
  5. Add the bay leaves, stir and remove from heat.
  6. Transfer to a serving bowl and serve with steamed rice.
