Pako Salad

Pako Salad
  • 2 cups Pako (edible fern, trimmed and blanched)
  • 4 pcs tomatoes (washed and diced)
  • 1 large red onion (diced)
  • 2 pcs salted eggs (cubed)
  • 1 can Tuna Flakes in Oil
  • 6pcs Calamansi (Juiced, can be substituted with 1 whole Lemon)
  • 4 tbsp olive oil
  • 1tbsp sugar
  • Salt and pepper to taste
  1. Drain the tuna flakes and reserved the oil for later use.
  2. In a clean bowl mix together reserve tuna oil, olive oil, sugar, salt and pepper. Beat continuously as you add the calamansi juice. Set aside.
  3. In a separate bowl put the pako, tomatoes, onions, salted eggs and tuna flakes.
  4. Drizzle with the calamansi dressing and toss gently.
  5. Serve immediately as side dish or appetizer.
